Separating biscuits from the cutters.

It’s a situation we’re all familiar with. Once the dough has been kneaded and rolled, it’s time to look forward to cutting out the biscuits together with the children. But what’s this? The dough seems to be reluctant to work with the new cutters. Either the dough remains on the baking board or else gets stuck in the cutter. And yet everything could be so simple. There are just a few things to be borne in mind in order to ensure that the dough separates easily.

  1. Put the dough in the fridge before using it. Dough which has been chilled will not stick as much and is better to work with.
  2. Dip your cutters in flour. This will prevent the biscuits from adhering to the cutter because the dough can then be separated more easily. But make sure that you do not use too much flour. There’s already plenty in the dough.

Our Quality-Management-System was matter to be monitor-audited in October 2017 according to the new ISO 9001:2015 directive. The audit by the certification body TÜV-SÜD Management Service GmbH was closed with great success and the ISO-Certificate was granted up to November 2019.
